Simple Pickled Beets Recipe
2 pounds, or 3 large beets
1 cup wine vinegar
1 ½ teaspoon Kosher or pickling salt
½ cup honey
1 cup filtered water
1. Wash and halve beets, wrap in foil and roast in 400-degree oven for 40 minutes. Once cooked, unwrap beets and allow to cool. Peel and thinly slice.
2. In a small pan, combine remaining ingredients and bring to a boil briefly. Stir to dissolve honey.
3. Arrange sliced beets in jar or cannister, pour liquid over. Cover tightly and refrigerate for a few days before serving.
